3 Mother Sauces Demo with Tony Legner
Tony will demonstrate how to make a Bachamel/Veloute (white sauce), A Espagnole (brown sauce), and a Hollandaise sauce. From these three we will expand into a Green Peppercorn sauce, a Red wine mushroom sauce, a Green onion vermouth sauce, a Bearnaise sauce, lemon sauce, a white wine sauce, mornay sauce with Parmesan, and other combination. Samples included.
